The expert team at Cachet Wine Cellars has created many incredible restaurant wine cellar designs for our Orange County clients, and now they’ve recently completed another beautiful commercial wine cellar at Papi Steak in Las Vegas.

Complete with modern, dual-paned wine cellar doors, triple-deep metal wine racking, and a cooling system that efficiently keeps the entire collection fresh at 55-58°F, this 2oft long x 15ft wide hospitality wine cellar surely keeps the wine and dine experience one to remember! 

Getting Started with These Restaurant Wine Cellar Designs



We were contacted to provide a solution to a problematic wine cellar as the project kicked off on a rocky note. The original construction had left the cellar in bad shape; from the cooling unit that didn’t satisfy its purpose to wonky wine racking and a design that just didn’t cut it, there was plenty to tackle.

In gist, the original restaurant wine cellar design fell short in several areas. From an inadequate cooling system to poorly fitted doors and a racking setup that limited accessibility, it was clear that we had to rethink the entire design and plan of the wine cellar. 


When you’re dealing with a commercial design, most of the time, you’ll need a split system cooling unit. Some people do self-contained cooling units for budget reasons, but they don’t satisfy the purpose functionality-wise. A self-contained unit for a commercial space is never going to work, so we really had to explain it to the client. For the size of their wine cellar, a self-contained system was not powerful enough to get cool air from one end of the cabinet to another. It was just very far.

Luxury Doors to Impress

The transformation of the doors was also a game-changer. Standing tall at seven feet with wood frames and dual-paned glass, they added a touch of elegance to the cellar. The doors were custom-made with 60-inch handles and Q-lon seals that keep air leaks at bay. Sealing the doors guarantees that the cool air will stay and regenerate quickly no matter how many times the cellar is opened daily. 

There are a lot of thousand-dollar bottle wines and champagnes in this commercial wine cellar, which is a common sight for a collection designed for profit. If we were to have designed the entire cellar from the beginning, we would recommend more advanced security locks for the doors. For this cellar, we agreed to keep the original traditional-style lock as what the original builder had installed.


Racking Up their High-End Wine Collection 


We didn’t stop at the doors; the racking system also had a makeover. Although the original racking was robustly made from VintageView, the order and combination were not very functional. It gave people a hard time reaching for the bottles at the back as they had to remove the bottles in front first. 

So, we replaced them all with VintageView triple-deep racks gleaming in gold. They held the bottles well and adorned the walls, showcasing the collection in style. 

The upper sections of the wine cellar were for display purposes only. We filled it mostly with dummy bottles, so no ladders were required like other tall wine displays 


Keeping it Running for Decades


With the renovation complete, we spoke with the clients about its maintenance. It is very important for every wine cellar to be periodically checked, especially the cooling systems. With a big operation like this, we recommend that regular check-ups be scheduled every six months to ensure everything stays in shape. By maintaining your wine cellars, disruptions are kept at bay, and guests are always ensured the best drinking experience.

We’ve built commercial wine cellars that have lasted for more than 20 years, such as the one at the Ritz-Carlton Hotel. We periodically checked their cellar every three months. If this new high-end steakhouse wine cellar stays consistent with its maintenance check every six months, we are optimistic the cellar will last for a long, long time.
